Veggie Stuffed Bell Peppers by Melanie Rotondo Yardley

Ingredients:
For Peppers:
Brown Rice
Celery
Onion
Garlic
Bell Peppers
Chicken Broth (can be substituted with water)
Weber Chicago Steak Seasoning
Whole pistachios

For Gravy:
1 Cup Chicken Broth
Corn Starch
Weber Chicago Steak Seasoning

Instructions:

  • Toast brown rice before boiling it
  • Chop celery, onions and garlic then saute
  • Add chopped bell peppers and whole pistachios with a few tablespoons of broth or water
  • Season with Weber Chicago Steak Seasoning
  • Stuff the peppers with the mixture and bake @350 for 30-35 minutes
    For Gravy:
  • Heat one cup of broth with cornstarch
  • Stir occasionally until thickens
  • Season with Weber Chicago Steak Seasoning
  • drizzle over peppers
